Hanging weight refers to the animal’s weight after processing but before cutting. This includes the bones, which are later removed during processing to give you deboned beef.


As an example, our customers typically receive between 100–115 lbs. of deboned beef per quarter when the animals live weight averages 1,200 pounds.  


We are located in the city of Frenchburg, Menifee County, Kentucky. 


From an animal averaging 1,200 lbs live weight, our customers can expect approximately:

  • 65 lbs of ground beef
  • 4 lbs of sirloin
  • 6.75 lbs of ribeye
  • 4 lbs of New York strip
  • 2.75 lbs of filet mignon
  • 26  lbs of roast
  • 6 lbs of brisket
  • 2 lbs of liver
